Buffalo Chicken and Blue Cheese Mashed Potato


I am a HUGE fan of buffalo wings. Sadly, they are not the healthiest item on the menu. Every once in a while I will treat myself to 6 of them, with a salad. Long gone are my days of seeing who can eat the most wings. I can't believe I even fell into that trap to begin with. But they were so yummy and I tend to become an eater when I am drinking. 

Now you see why I was inspired to do a healthier living website!



 I am cheap. I also don't use enough butter / margarine in my cooking to justify buying/paying more than what I do for this giant tub ($2) and it last me about a month. The Franks Red Hot I got the bottles from the discount outlet we shop at once a month for $1.99, usually about $3.50 in the stores here.

Again, if you have been following along for any amount of time you may have noticed that yes, I do use recipes, but no, I don't really follow them. They tend to be more for inspiration.

Chicken breasts were on sale this week at Kroger for $5.99 3lb bag, usually $7.99. This little batch was actually a freebie from my mother-in-law.

                         The only thing I could not get on sale was the reduced fat blue cheese.


 I had some leftover Nutrisystem Cheesey Mashed Potatoes so instead of making homemade mashed potatoes I decided to use these ups. I added some extra sprinkles of cheese for flavor along with the blue cheese.

                                                This is my meal when it was finished.

  2. It was really yummy. The recipe was a little different than I made it. Next time i might try breading the chicken so the sauce coats more.
